Allspice is the dried unripe fruit of a midcanopy tree called Pimenta dioica. In Middle Eastern cuisine, it is used to flavour a variety of stews and meat dishes. In the United States, it is used mostly in desserts. In Arab cuisine, many dishes call for allspice as the sole spice added for flavouring. In Great Britain, it appears in many dishes, including cakes.
