Nisin is a polycyclic antibacterial peptide which is produced by fermentation of food grade bacteria. It is commercially used as a food preservative. Nisin is widely used in processed foods, majorly in dairy products, juice, canned foods and meat to increase the shelf life of the food products. It has a pH range of 3.5-8 and regarded safe by the various food safety authorities in different countries including WHO and FDA. Nisin works by inhibiting the growth of the pathogens to keep the food fresh.
