Allspice is also called as Pimenta, Jamaica pimenta, Turkish yenibahar, Myrtle pepper. Allspice are picked when they are green and unripe and then they are dried in the sun traditionally. After drying they become brown, smooth peppercorns and resemble large. Allspice as fruit has longer shelf life then the powdered product.

Fruits produce more aromatic product when they are freshly grounded before use. Allspice has ability to lower inflammation and alleviate pain in parts of the body. Allspice leaves are used during cooking and removed before serving. It is used in different ways in different countries. In Caribbean cuisine, it is used in Caribbean jerk seasoning in moles and pickling and also as an ingredient in curry powders and commercial sausage preparations. In Middle Eastern cuisine, it is used to flavour a variety of stews and meat dishes. In the United States, it is used mostly in desserts. In Arab cuisine, many dishes call for allspice as the sole spice added for flavouring. In Great Britain, it appears in many dishes, including cakes.
